 Quinoa Bowl with Roast Vegetables

A true delicacy that not a lot of women can resist. Cook the quinoa, add steamed, roast and fresh vegetables, pour a sauce over everything and serve. The vegetables can easily change according to the contents of your fridge. You can choose to make only steamed, only roast or only fresh vegetables, it’s all up to you.

Yield: 4 servings
 
Ingredients:
  • 1 cup Quinoa
  • Salt
  • 1 Small eggplant, sliced
  • 2 Sweet potatoes, peeled and sliced
  • 1 Beet, peeled and diced
  • 2 Peppers, cut into strips
  • 1 Red onion, sliced
  • 2 Fennels, halved and sliced
  • 2 Carrots, peeled and diagonally sliced
  • 4 tbsp Olive oil
  • 4 Garlic cloves, julienned
  • ½ Avocado
  • 5-6 Cherry tomatoes
  • Radish sprouts (to serve)
 
For the sauce:
  • 2 tsp Raw tahini
  • ½ Lemon, juiced
  • 1 tbsp Date honey
  • 4 tbsp Olive oil
  • Salt, pepper
 
Preparation:
Rinse the quinoa well in a strainer and add it to the EasyCook pot. 
Select the manual PRO setting and set it to 100*c for 30 minutes. 
Add 2 cups of water and season with salt. Place the steaming tray on top of the quinoa and add the sweet potatoes, carrots and beets to it (make sure the beets don’t touch other vegetables to prevent coloring) and close the lid. 
In the meantime, roast vegetables in the oven: Heat up an oven to 220*c. Smear 2 tbsp Olive oil on the cooking tray and place the eggplants, peppers and fennel on it. Season each slice with salt, pepper and olive oil. Add garlic slices and bake for 10 minutes. Take the tray out and check which vegetables are ready, and remove them. Keep baking until all vegetables are soft and golden. 
To serve: Place the quinoa in a large bowl, on top of it arrange roast and steamed vegetables, add avocado slices and cherry tomatoes, mix the sauce ingredients and pour over everything. Serve immediately.
