A delicious Thai dish. Recommended! Just don’t forget to use coconut milk with no preservatives.
Cooking time: 20 minutes
Yield: 5-6 servings
- 2 cans Chickpeas, drained
- 2 Potatoes, finely diced
- 4 Tomatoes, peeled and cut into strips
- 10 Basil leaves, coarsely chopped
- 6 Cilantro stalks
- 5 Garlic cloves
- 1 cup Broccoli (can use frozen)
- 1 full tsp Curry powder
- 1 can Coconut milk
- 3 tbsp Soy sauce
- 1 tsp Sugar
- 2 tbsp Oil
- Salt, pepper
Finely chop or blend the garlic with the cilantro. Set the EasyCook cooker on the PRO setting on 110*c for 30 minutes. Fry the cilantro and garlic in oil for 10 minutes. Add the curry, coconut milk and the rest of the ingredients. Close the lid and let it cook until the end of the program. Serve over light basmati rice and a simple garden salad.
By the way, the EasyCook has a heat preservation function that starts automatically after the cooking process is over. To finish and turn off the function, press and hold the "Warm/Cancel" button. The cooker will display all the programs, and the heating process will be over.
